Broth Preparation

    Prepare the Broth

    In a large pot, combine chicken bones, water, salt, ginger, and garlic. Bring to a boil, then reduce heat and simmer for at least 4 hours, skimming off any impurities.

Char Siu Preparation

    Make the Char Siu

    Preheat the oven to 325°F (160°C). Mix soy sauce, honey, and five-spice powder in a bowl. Marinate the pork belly in the mixture for at least 30 minutes, then place it in a baking dish and roast for about 1.5 hours, basting with the marinade every 30 minutes. Once done, let it cool and slice into thin pieces.

Shoyu Egg Preparation

    Prepare the Shoyu Egg

    Boil the eggs for 7 minutes, then transfer them to an ice bath. Once cooled, peel and soak in a mixture of soy sauce and mirin for at least 2 hours, preferably overnight.

Final Assembly

    Assemble the Ramen

    Cook ramen noodles according to package instructions. In a bowl, add noodles, pour in the hot shio broth, and top with slices of char siu, halved shoyu egg, black garlic oil, chopped scallions, and nori sheets.
