Cooking the Potato Confit

Prepare the Potatoes
Peel and slice the potatoes into 1/4 inch rounds. Set aside.

Making the Coffee-Vanilla Demi-Glace

Prepare the Sauce
In a saucepan, reduce the beef stock over medium heat until it thickens, about 20 minutes.

Add Coffee and Vanilla
Stir in brewed coffee and split vanilla bean (scrape the seeds into the sauce). Continue to cook for an additional 10 minutes. Finish with butter, stirring until melted.

Season the Steak
Pat the Wagyu steak dry, then season generously with salt and black pepper.

Shape the Glass
While the chips are still warm, mold them into a glass shape by carefully bending them before they cool completely.
