Method

Cooking the Potato Confit

    Prepare the Potatoes

    Peel and slice the potatoes into 1/4 inch rounds. Set aside.

    Cook the Potatoes

    In a saucepan, combine the olive oil, garlic, and thyme. Heat over low heat, then add the sliced potatoes. Cook gently for about 1-1.5 hours, until tender but not falling apart. Remove from heat and let cool in the oil.

Making the Coffee-Vanilla Demi-Glace

    Prepare the Sauce

    In a saucepan, reduce the beef stock over medium heat until it thickens, about 20 minutes.

    Add Coffee and Vanilla

    Stir in brewed coffee and split vanilla bean (scrape the seeds into the sauce). Continue to cook for an additional 10 minutes. Finish with butter, stirring until melted.

Cooking the Wagyu Steak

    Season the Steak

    Pat the Wagyu steak dry, then season generously with salt and black pepper.

    Sear the Steak

    Heat olive oil in a cast-iron skillet over high heat. Add the steak and sear for 3-4 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

Preparing the Potato Chip Glass

    Make Potato Chips

    Using a mandoline, slice the potato thinly. Heat vegetable oil in a deep fryer or heavy pot. Fry the potato slices until golden and crispy. Drain on paper towels and season with salt.

    Shape the Glass

    While the chips are still warm, mold them into a glass shape by carefully bending them before they cool completely.

Plating

    Assemble the Dish

    Place the potato confit on the plate, slice the Wagyu steak and arrange it next to the confit. Drizzle with the coffee-vanilla demi-glace and place the potato chip glass on top or alongside.
