Steak Preparation

    Season and Cook the Steak

    Preheat a grill or skillet over medium-high heat. Rub the skirt steak with olive oil, salt, and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest before slicing.

Mole Rojo Preparation

    Prepare the Mole Rojo

    Remove stems and seeds from guajillo and ancho chiles. In a dry skillet, toast the chiles until fragrant. Blend toasted chiles with chopped tomatoes, garlic, onion, chicken broth, cumin, cinnamon, sugar, and salt until smooth. Simmer in a saucepan for 15-20 minutes until thickened.

Burnt Avocado Preparation

    Char the Avocado

    Heat a grill or skillet over medium heat. Place avocado halves cut side down and cook until charred, about 3-4 minutes. Remove and drizzle with lime juice and sprinkle with salt.

Legume and Mango Salsa Preparation

    Mix the Salsa

    In a bowl, combine black beans, diced mango, red onion, cilantro, lime juice, and salt to taste. Toss gently to combine.

Assembly

    Serve the Dish

    Slice the rested skirt steak and serve topped with mole rojo, alongside burnt avocado and a generous scoop of legume and mango salsa.
