Method

Grilled Oyster

  1. 1

    Prepare the Caramelized Onion Butter

In a skillet, melt butter over medium heat. Add chopped onion and cook until caramelized, about 15-20 minutes. Stir in minced garlic, parsley, and lemon juice. Set aside.

  2. 2

    Grill the Oysters

Preheat the grill to medium-high heat. Place oysters on the grill and spoon caramelized onion butter over each oyster. Grill for about 5-7 minutes until oysters are cooked and edges curl.

Fried Oyster

  1. 3

    Prepare the Breading

In a bowl, mix flour and cornmeal. In another bowl, beat the egg with water.

  2. 4

    Fry the Oysters

Dip oysters into the egg mixture, then coat in the flour-cornmeal mix. Heat oil in a deep skillet over medium-high heat. Fry oysters until golden brown, about 2-3 minutes per side. Drain on paper towels.

  3. 5

    Serve

Serve fried oysters with aioli and lemon wedges.

Baked Oyster

  1. 6

    Prepare the Topping

In a bowl, mix breadcrumbs, chopped anchovy fillets, grated Parmesan cheese, and melted butter. Cut brie into small pieces.

  2. 7

    Bake the Oysters

Preheat the oven to 375°F (190°C). Place oysters on a baking sheet. Top each oyster with breadcrumb mixture and a piece of brie. Bake for 10-12 minutes until cheese is bubbly and breadcrumbs are golden.
