Lamb Preparation

    Prepare the Lamb

    Preheat the oven to 400°F (200°C). Season the rack of lamb with salt and black pepper. In a small bowl, mix the olive oil, orange zest, and rosemary. Rub this mixture all over the lamb.

    Roast the Lamb

    Place the lamb on a roasting rack and roast in the preheated oven for about 25-30 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Goat Cheese & Potato Tart Preparation

    Make the Tart Crust

    In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

    Prepare the Filling

    Preheat the oven to 375°F (190°C). Roll out the dough and fit into a tart pan. Layer the sliced potatoes on the crust. In a bowl, whisk together the cream, eggs, goat cheese, salt, and pepper. Pour over the potatoes.

    Bake the Tart

    Bake in the oven for 40-45 minutes or until the filling is set and the top is golden brown.

Romanesco Preparation

    Sauté the Romanesco

    In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute. Add the romanesco florets, salt, and pepper. Cook for 5-7 minutes until tender but still crisp.

Passion Fruit Sauce Preparation

    Make the Sauce

    In a small saucepan, combine passion fruit pulp, honey, and lime juice. Heat over low heat for 5 minutes, stirring until well combined.
