Method
Panna Cotta

Prepare Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until soft. Squeeze out excess water and set aside.

Heat Mixture
In a saucepan over medium heat, combine the buttermilk, heavy cream, sugar, vanilla extract, and a pinch of salt. Heat until just below boiling.

Combine with Gelatin and Goat Cheese
Remove from heat, add the softened gelatin, and stir until fully dissolved. Whisk in goat cheese until smooth.

Chill
Pour the mixture into serving glasses and refrigerate for at least 4 hours or until set.
Spruce Tip Infused Honey Comb

Infuse Honey
Combine honey and spruce tips in a small saucepan and heat gently for 10 minutes. Strain and let cool.

Set Honeycomb
Pour the mixture into molds and let set at room temperature until firm.
Spent Grain Streusel

Mix Ingredients
In a bowl, combine spent grains, flour, brown sugar, cinnamon, and melted butter. Mix until crumbly.

Bake
Spread the mixture on a baking tray and bake at 180°C (350°F) for 15-20 minutes until golden brown. Let cool.
