Method

Preparing the Empanada Dough

    Make the Dough

    In a large bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add water, mixing until a dough forms. Knead gently and wrap in plastic wrap. Refrigerate for 30 minutes.

Making the Plantain Custard

    Cook Plantains

    Peel and slice ripe plantains. In a saucepan, combine plantains, coconut milk, sugar, and a pinch of salt. Cook over medium heat until plantains are tender. Mash and mix until smooth. Stir in cornstarch and vanilla extract until thickened. Let cool.

Preparing Pineapple Caramel

    Make Caramel

    In a saucepan over medium heat, combine pineapple juice and brown sugar. Stir until sugar dissolves. Add butter and cinnamon, cooking until it thickens. Set aside.

Making Spiced Raisins

    Prepare Raisins

    In a small saucepan, combine raisins, water, cinnamon, nutmeg, and vanilla extract. Bring to a boil, then reduce heat and simmer until raisins plump, about 10 minutes. Drain and set aside.

Assembling the Empanadas

    Fill and Seal

    Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface. Cut into circles. Place a spoonful of plantain custard in the center, top with spiced raisins, and fold over to seal. Crimp edges with a fork.

Baking the Empanadas

    Bake

    Place empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Drizzle with pineapple caramel before serving.
