    Prepare the Steak

    Remove the dry aged rib eye steaks from the refrigerator and let them sit at room temperature for about 1 hour before cooking. This helps in even cooking.

    Season the Steak

    Generously season both sides of the steaks with kosher salt and freshly ground black pepper. Allow the seasoning to penetrate for about 30 minutes.

    Preheat the Grill or Oven

    Preheat your grill to high heat (about 450°F to 500°F) or preheat your oven to 400°F.

    Sear the Steak

    If using a grill, brush the grates with olive oil. Place the steaks on the grill and sear for about 4-5 minutes on each side for medium-rare, adjusting time as desired. If using an oven, sear the steaks in a hot skillet with olive oil for 2-3 minutes on each side before transferring to the oven for an additional 10-15 minutes.

    Add Aromatics

    During the last few minutes of cooking, add rosemary sprigs and crushed garlic cloves to the skillet or grill for added flavor.

    Rest the Steak

    Once cooked to your desired doneness, remove the rib eye from heat and let it rest for at least 10 minutes to allow the juices to redistribute.
