Method

Prepare Polenta

    Cook the Polenta

    In a large pot, bring 4 cups of water to a boil. Add salt and gradually whisk in the organic cornmeal. Reduce heat and cook for about 20-25 minutes, stirring frequently until thick and creamy. Set aside.

Make Mole Negro

    Prepare the Chiles

    Remove stems and seeds from the ancho and guajillo chiles. Soak them in hot water for about 20 minutes until softened.

    Blend the Mole

    In a blender, combine the soaked chiles, tomato, garlic, onion, cinnamon stick, sesame seeds, and salt. Add chicken broth as needed for blending until smooth.

    Cook the Mole

    In a saucepan, heat the blended mole over medium heat. Stir in dark chocolate and simmer for about 15 minutes. Adjust seasoning with salt.

Assemble the Dish

    Combine and Serve

    On a plate, spread a generous amount of polenta, top with mole negro, and garnish with pepitas, duck chicharron, and fresh cilantro.
