Method

Lamb Chops

    Prepare the Lamb Chops

    Season the lamb chops with salt, black pepper, and crushed garlic. Drizzle with olive oil and sprinkle with chopped rosemary. Let marinate for at least 30 minutes.

    Cook the Lamb Chops

    Preheat a grill or skillet over medium-high heat. Cook the lamb chops for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Pomme Anna

    Prepare the Pomme Anna

    Preheat the oven to 375°F (190°C). Peel and thinly slice the potatoes. In a buttered baking dish, layer the potato slices, brushing each layer with melted butter and seasoning with salt and pepper.

    Bake

    Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden and crispy.

Roasted Black Trumpet Mushrooms

    Roast the Mushrooms

    Preheat the oven to 400°F (200°C). Toss the black trumpet mushrooms with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.

Glazed Spring Vegetables

    Prepare the Vegetables

    Peel and slice the carrots and baby turnips. Trim the asparagus. In a skillet, melt butter over medium heat, add the vegetables and honey, and season with salt and pepper.

    Glaze the Vegetables

    Sauté the vegetables until tender and caramelized, about 10-12 minutes.

Black Garlic Jus

    Make the Jus

    In a saucepan, combine black garlic, beef stock, and red wine. Bring to a simmer and reduce by half. Stir in butter and season with salt and pepper to taste.
