Preparation

    Melt the Chocolate

    Preheat the oven to 375°F (190°C). In a heatproof bowl, combine the dark chocolate and butter. Melt together over a double boiler or in the microwave, stirring until smooth. Let cool slightly.

    Mix the Soufflé Base

    In a separate bowl, whisk together the sugar and egg yolks until pale and thick. Gradually add the melted chocolate mixture and vanilla extract, stirring until fully combined.

Whip Egg Whites

    Beat the Egg Whites

    In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the sugar, continuing to whisk until stiff peaks form.

    Combine Mixtures

    Gently fold the egg whites into the chocolate mixture in thirds, being careful not to deflate the mixture.

Bake and Serve

    Prepare the Ramekins

    Butter and sugar the inside of ramekins to help the soufflé rise. Pour the soufflé mixture into the prepared ramekins, filling them about 3/4 full.

    Bake

    Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for about 12-15 minutes, or until puffed and set.

    Serve

    Remove from the oven and dust with powdered sugar. Serve immediately with Heaven Hill Barrel Aged Sea Monster and Employee Secret Blend on the side.
