Preparation of Oysters

    Clean the Oysters

    Thoroughly scrub the oysters under cold running water to remove any dirt or debris. Shuck the oysters and place them on a baking sheet.

    Make the Butter Mixture

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the lemon juice, espellete pepper, and chopped parsley. Remove from heat.

    Prepare the Bread Crumbs

    In a food processor, pulse the sourdough bread into fine crumbs. In a skillet, heat the olive oil over medium heat. Add the bread crumbs and salt, toasting until golden and crispy, about 5 minutes.

Cooking

    Charbroil the Oysters

    Preheat the grill to medium-high heat. Spoon the butter mixture over each oyster and top with a generous amount of toasted bread crumbs. Place the oysters on the grill and cook for 5-7 minutes, until the edges are bubbly and the bread crumbs are golden.

Serving

    Serve

    Remove the oysters from the grill and let them cool for a minute. Serve immediately with lemon wedges and enjoy.
