Butter Cake

    Prepare the Batter

    In another bowl, combine the flour and baking powder. Gradually add this to the creamed mixture, alternating with the milk. Mix until well combined.

    Bake the Cake

    Pour the batter into a greased and floured 9-inch round cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Sour Wench Strawberry Sauce

    Prepare the Sauce

    In a saucepan over medium heat, combine the strawberries, sugar, lemon juice, and water. Cook until the strawberries break down and the sauce thickens, about 10-15 minutes. Remove from heat and let cool.

Whipped Cream

    Make Whipped Cream

    In a large mixing bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract, and continue to whip until soft peaks form. Be careful not to overwhip.

Assembly

    Serve the Cake

    Slice the cooled butter cake and serve with a generous drizzle of the sour wench strawberry sauce. Top with a dollop of whipped cream and garnish with fresh mint leaves.
