    Prep the Ingredients

    Chop the bell peppers, onion, and spinach. If using ham or bacon, ensure it is pre-cooked and diced.

    Beat the Eggs

    In a bowl, beat the eggs with salt and black pepper until well combined.

    Cook the Veggies and Meat

    In a non-stick skillet, heat the butter or oil over medium heat. Add the chopped bell peppers, onion, and spinach. Sauté for 3-4 minutes until softened. Add the diced ham or bacon and cook for another 2 minutes.

    Add the Eggs

    Pour the beaten eggs over the cooked veggies and meat in the skillet. Let it cook undisturbed for about 2-3 minutes or until the edges start to set.

    Finish the Omelet

    Using a spatula, gently lift the edges of the omelet and tilt the skillet to allow uncooked egg to flow to the edges. Once the top is just set, fold the omelet in half and slide it onto a plate.

    Serve

    Serve hot. Optionally, you can cover it with gravy for an extra charge.
