Prepare the Pasta
Bring a large pot of salted water to a boil. Add the macaroni pasta and cook according to the package instructions until al dente. Drain and set aside.

Make the Smoked Gouda Sauce
In a saucepan, heat the olive oil over medium heat. Add the caramelized onions and cook for 2-3 minutes until heated through. Stir in the heavy cream and bring to a simmer. Gradually add the smoked gouda cheese, stirring until melted and smooth. Season with salt and pepper.

Combine the Ingredients
In a large mixing bowl, combine the cooked macaroni, smoked brisket, BBQ sauce, and the smoked gouda sauce. Mix until all ingredients are well incorporated.

Preheat your oven to 350°F (175°C). Transfer the mixture into a greased baking dish. Sprinkle the bread crumbs and crispy jalapeños on top. Bake for 20-25 minutes, or until the top is golden and bubbly.
