Prepare the Brisket
If not already smoked, smoke the brisket until tender, about 8-10 hours at 225°F. Once done, let it rest for at least 30 minutes before slicing.

Warm the BBQ Sauce
In a small saucepan, warm the peach BBQ sauce over low heat until heated through.

Assemble the Burger
On the bottom half of the burger bun, place a leaf of iceberg lettuce. Add a generous portion of sliced brisket, drizzle the warm peach BBQ sauce over the brisket, and top with a slice of white cheddar cheese.

Add Toppings
Spread a tablespoon of garlic aioli on the top half of the bun. Add crispy jalapeños and pickled onions on top of the cheese. Finally, place the top half of the bun on the burger.

Serve immediately with your favorite sides.
