Prepare the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Make the Patties
In a bowl, combine the ground beef, salt, and black pepper. Form into two patties.

Cook the Patties
In the same skillet, cook the patties over medium-high heat for about 4-5 minutes on each side, or until desired doneness. In the last minute of cooking, place goat cheese on top of each patty to melt.

Prepare the Toppings
Slice the tomato and lemon. Squeeze lemon juice over the mixed greens.

Assemble the Burger
On the bottom half of the burger buns, spread garlic aioli, then place the burger patty with melted goat cheese, followed by bacon, tomato slices, mixed greens, and a drizzle of balsamic reduction. Top with the other half of the bun.

Serve
Serve the burgers warm with extra mixed greens on the side.
