Place a medium saucepan over medium heat. Add the steel cut oats and toast, stirring frequently, 2–3 minutes until fragrant and lightly golden. Toasting deepens flavor but can be skipped.

Add 3 cups water and 1 teaspoon salt to the saucepan and increase heat to high to bring to a boil.

Once boiling, reduce heat to low so the liquid is at a gentle simmer. Partially cover the pot with a lid (leave a small gap) to limit splatter but allow steam to escape.

Simmer, stirring occasionally, until oats are tender with a chewy but creamy texture, 20–30 minutes. If the oats absorb too much liquid and look dry before they’re tender, add up to 1/2 cup additional water, 2 tablespoons at a time.

For a very creamy texture, cook an additional 5 minutes, stirring more frequently to prevent sticking.

Sweeten to taste by stirring in 2 tablespoons maple syrup or honey. Taste and add more if desired.
