Prepare Glass
Rim the glass
Run the lemon wedge around the rim of a highball or pint glass. Spread the coarse celery or smoked salt on a small plate and dip the moistened rim into the salt to coat evenly. Set glass aside.
Mix Cocktail
Fill a cocktail shaker or mixing glass halfway with ice cubes.
Add vodka (2 oz), tomato juice (4 oz), fresh lemon juice (1/2 oz), Worcestershire sauce (1/2 tsp), prepared horseradish (1/2 tsp), hot sauce (3 dashes), olive brine or pickle juice if using (1/2 tsp), celery salt (1/4 tsp), smoked paprika (1/8 tsp) and 6 grinds of black pepper to the shaker.
Secure the shaker lid and shake gently 5–8 seconds to chill and lightly dilute. For a smoother texture, stir in a mixing glass for 10–15 seconds instead of shaking.
Taste and adjust seasoning: add an extra dash of hot sauce for heat, a pinch more celery salt for savoriness, or 1/4 tsp more horseradish for bite. If too thick, add a splash (1/4–1/2 oz) of tomato juice or water.
Assemble & Garnish
Garnish with a celery stalk and a lemon wedge on the rim. Add a cocktail pick threaded with olives or a cornichon and, if desired, a crispy bacon strip for a savory accent.
Finish with a light dusting of smoked paprika and two quick grinds of black pepper over the top. Serve immediately with a stirring straw.
