Cocktail

Method

Cocktail

  1. 1

    Prepare shaker

If using a salted or spiced rim, pour the coarse salt or tajín onto a small plate. Run the lime wedge around the rim of a chilled coupe or rocks glass, then dip the rim into the salt/tajín to coat. Set the glass aside.

  2. 2

Dry shake (if using egg white)

In a cocktail shaker, combine 2 oz blanco tequila, 1.5 oz fresh orange juice, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur, and 1 egg white (if using). Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

  3. 3

    Wet shake

Add about 1 cup of ice to the shaker. Seal and shake hard for 12–18 seconds until the shaker is very cold to the touch and the mixture is well-chilled (this also dilutes to balance the drink).

  4. 4

    Strain and serve

Double-strain the cocktail into the prepared chilled glass using a Hawthorne strainer and a fine mesh strainer (if available) to remove ice shards and achieve a smooth texture. If you skipped the egg white, a single fine strain is still recommended for clarity.

Garnish & Finish

  1. 5

Garnish with an orange wheel and a lime wheel or wedge on the rim. Optionally express an orange peel over the surface to release oils for extra aroma. Serve immediately.
