Method

Sandwich

  1. 1

    Prepare bacon

If you don't have pre-cooked bacon, cook 4 strips of bacon until crisp. For stovetop: heat a skillet over medium, add bacon and cook 3–5 minutes per side until browned and crisp, turning occasionally. Drain on paper towels and keep warm. For oven: preheat oven to 200°C (400°F), place bacon on a rack over a rimmed baking sheet and bake 12–18 minutes until crisp; transfer to paper towels to drain.

  2. 2

    Prep tomato and lettuce

Wash and dry the lettuce leaves. Slice the ripe tomato into 3 even slices (about 1/4-inch / 6 mm thick). Lightly season the tomato slices with 1/4 tsp salt and 1/8 tsp black pepper to bring out flavor.

  3. 3

    Toast bread (optional)

Optional: spread 1 tsp butter evenly on one side of each bread slice. Toast in a skillet over medium heat, buttered side down, 1–2 minutes until golden, or use a toaster until lightly browned. Toasting helps prevent soggy bread from the tomato.

  4. 4

    Assemble sandwich

Spread 1 tablespoon mayonnaise evenly on one slice of bread (onto the untoasted or toasted side as preferred). Place the 2 lettuce leaves on top of the mayo, then layer the 3 seasoned tomato slices over the lettuce. Add the 4 bacon strips in a single layer on top of the tomato. Top with the remaining bread slice, mayo-side down or plain, depending on preference. Press gently to compact.

  5. 5

    Slice and serve

Cut the sandwich in half diagonally or down the middle. Serve immediately with pickle slices if using.
