Muffin Batter

Preheat and prepare pan
Preheat the oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

Combine dry ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly mixed.

Combine wet ingredients
In a separate bowl or large measuring cup, whisk the buttermilk, eggs, and melted cooled butter until smooth.

Mix batter
Pour the wet ingredients into the dry ingredients and gently fold with a spatula just until combined. Do not overmix — some small lumps are fine.

Fold into batter
Fold the chopped bacon, shredded cheddar, chopped chives and black pepper into the muffin batter until distributed evenly. Reserve about 3 tablespoons of cheddar for topping if desired.

Portion into tin
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle the reserved shredded cheddar on top of each muffin and lightly sprinkle coarse sea salt over a few if using.

Bake in the preheated 400°F (200°C) oven for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out with a few moist crumbs (not wet batter). Rotate the pan halfway through baking for even browning if your oven bakes unevenly.

Cool
Remove the muffins from the oven and let them cool in the pan for 5 minutes, then transfer to a wire rack to cool another 10 minutes. This prevents soggy bottoms and allows the crumb to set.
