    Prepare and cook bacon

    Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Lay 8 slices of thick-cut bacon in a single layer on the rack or directly on the foil. Bake for 12–18 minutes, turning once if not using a rack, until bacon is deep golden and crisped to your liking. Remove bacon to a plate lined with paper towels to drain and reserve 2 tablespoons of bacon fat if desired.

    Prepare sandwich roll and spread

    While the bacon bakes, cut the baguette or large roll lengthwise, leaving a hinge if you prefer. Lightly spread 1 tablespoon mayonnaise on one side and 1 teaspoon Dijon mustard on the other. If you like, spread 1 tablespoon softened butter on the outside of the roll for toasting later.

    Cook eggs

    Heat a nonstick skillet over medium-low heat with 1 teaspoon olive oil or reserved bacon fat. Crack 2 large eggs into a bowl, beat lightly with 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper (reserve remaining pepper), then pour into the skillet to make a folded scrambled-egg patty or cook as a thin omelette. For folded scramble: gently stir until curds begin to form, then push into an even round patty and cook until just set, 2–3 minutes. For an omelette: tilt the pan to spread the eggs thinly and cook until set. Remove from pan and keep warm.

    Assemble sandwich

    Place 2 slices of cheddar cheese on the bottom half of the roll. Top with the hot eggs so the cheese begins to melt. Layer 4 slices of the cooked bacon on top of the eggs, then add the remaining 4 bacon slices if you prefer a very meaty sandwich (or reserve extra bacon alongside). Add the optional 1 cup fresh spinach or arugula on top of the bacon. Sprinkle the remaining 1/2 teaspoon black pepper over the greens.

    Toast and finish

    Heat a clean skillet or griddle over medium heat. Place the assembled sandwich, buttered side down, on the skillet and press gently with a spatula or sandwich press. Cook 1–2 minutes until the exterior is golden and the cheese is fully melted; flip briefly if needed to brown the other side. Alternatively, place the sandwich under a broiler for 1–2 minutes, watching carefully to avoid burning.

    Remove from heat, slice in half if desired, and serve immediately. Provide extra napkins — this hearty Bacon Bag is best enjoyed hot.
