Prep
Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with foil and place a wire rack on top. This allows air to circulate and yields crisp bacon.

Prepare bacon
In a small bowl combine the brown sugar, black pepper, and maple syrup. Pat the bacon slices dry with paper towel. Brush one side of each bacon slice lightly with the maple sugar mixture (reserve any excess).

Arrange and bake
Arrange bacon slices on the wire rack, sugared side up, ensuring they do not overlap. Bake for 18–22 minutes, or until edges are deeply golden and bacon is crisp. Bake time depends on thickness; check at 15 minutes for your oven.

Assemble Samm A - Turkey, Cheddar & Arugula (4 sandwiches)
Spread 1 tsp mayonnaise on the bottom half of 4 buns. Layer 2–3 oz (about 2–3 slices) smoked turkey evenly across each bottom bun, top with a slice of cheddar and a small handful of baby arugula. Add a thin tomato slice if desired. Close with top bun and gently press.

Assemble Samm B - Ham, Pickle & Mustard (4 sandwiches)
Spread 1/2 tsp whole grain mustard on the bottom half of 4 buns and 1/2 tsp mayonnaise on the top half. Fold 2 oz ham per sandwich and place onto bottoms, add 1–1.5 pickle slices (thin) and a few thin red onion rings. Close with tops.

Finish and plate
Arrange all 12 mini samms on a serving board. Tuck several bacon chips around the sandwiches. Garnish the board with extra basil leaves and remaining arugula. If serving family-style, provide small picks to hold sandwiches together. Serve immediately.
