Prepare the glass
Rub a lime wheel around the rim of an old fashioned glass. Dip the rim lightly into coarse or smoked salt to coat about half the rim for a Texas-style accent. Set the glass aside.

Combine base ingredients
Fill a cocktail shaker with ice. Add 2 oz bourbon, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, 0.5 oz agave nectar, 0.5 oz peach liqueur, and 2 dashes Angostura bitters.

Shake
Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.

Strain over ice
Place 2–3 large ice cubes into the prepared old fashioned glass. Double-strain (or fine-strain if preferred) the cocktail from the shaker into the glass to remove small ice shards and citrus pulp.

If you prefer a lighter finish, top with about 1 oz dry sparkling water or club soda. Gently stir once to combine.

Garnish with a lime wheel on the rim and, if using, place a candied jalapeño slice on top of the drink for a sweet-heat accent. Serve immediately.
