Method

Cocktail

  1. 1

    Prepare the glass

Rub a lime wheel around the rim of an old fashioned glass. Dip the rim lightly into coarse or smoked salt to coat about half the rim for a Texas-style accent. Set the glass aside.

  2. 2

    Combine base ingredients

Fill a cocktail shaker with ice. Add 2 oz bourbon, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, 0.5 oz agave nectar, 0.5 oz peach liqueur, and 2 dashes Angostura bitters.

  3. 3

    Shake

Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.

  4. 4

    Strain over ice

Place 2–3 large ice cubes into the prepared old fashioned glass. Double-strain (or fine-strain if preferred) the cocktail from the shaker into the glass to remove small ice shards and citrus pulp.

  5. 5

    Top (optional)

If you prefer a lighter finish, top with about 1 oz dry sparkling water or club soda. Gently stir once to combine.

  6. 6

    Float mezcal

Pour 0.25 oz mezcal over the back of a bar spoon so it floats on the surface of the drink, creating a smoky top note reminiscent of a Texas tumbleweed rolling over prairie brush.

Garnish

  1. 7

Garnish with a lime wheel on the rim and, if using, place a candied jalapeño slice on top of the drink for a sweet-heat accent. Serve immediately.

Tools & Ice

  1. 8

Use large ice cubes to slow dilution and keep the drink cold. Use a strainer when pouring to avoid ice shards and to achieve a clean presentation.
