Sausage & Filling

    Prepare filling

    In a large bowl, combine the softened cream cheese, shredded cheddar, chopped green onions, garlic powder and black pepper. Mix until smooth and evenly distributed.

    Prepare sausage

    Remove the sausage from its casing if using links, and place the ground sausage in a separate bowl. Season if desired with up to 1/2 teaspoon additional kosher salt and a pinch of pepper (do not over-salt because breadcrumbs and other components will add salt).

    Divide the cream cheese mixture into 8 equal portions (about 1¼ ounces each). Roll each portion into a ball and then press a cube of cheddar cheese into the center and reform into a smooth ball so the cheddar is completely enclosed.

    Take about 2 ounces (by weight) or a golf-ball-sized portion of the ground sausage and flatten it in your palm into a patty. Place one of the cream cheese–cheddar balls in the center and wrap the sausage completely around it, sealing seams and smoothing into an even ball. Repeat to make 8 sausage-wrapped cheese balls. Use a toothpick to secure seams if needed, then remove toothpicks before frying (see note).

Breading

    Set up a three-station breading line: bowl 1 - flour mixed with 1 teaspoon kosher salt and smoked paprika; bowl 2 - whisk together eggs and milk; bowl 3 - panko breadcrumbs mixed with remaining 1 teaspoon kosher salt and 1 teaspoon black pepper.

    One at a time, roll each sausage ball in the seasoned flour to coat lightly, shaking off excess. Dip into the egg wash, then press into the panko breadcrumbs until fully coated. For extra-crispy crust, repeat the egg wash and panko step for a double coating.

    Place breaded balls on a tray and refrigerate for at least 20 minutes to help the coating adhere and the shape set. If you used toothpicks, keep them inserted while chilling; remove them just before frying.

Assembly & Frying

    Pour oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches (enough to fully submerge the balls). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread—if it browns in about 60 seconds, the oil is ready.

    Fry the Armadillo Eggs in batches of 3–4, careful not to overcrowd. Gently lower each ball into the hot oil with a slotted spoon or spider. Fry, turning occasionally, until golden brown and internal sausage reaches 160°F (71°C), about 5–7 minutes per batch. If you used double coating, time may be closer to 6–8 minutes.

    Remove cooked pieces with a slotted spoon and transfer to a wire rack set over a baking sheet or paper towels to drain. Let rest 2–3 minutes before serving so molten cheese won't burn.

    Serve the Armadillo Eggs warm with barbecue sauce for dipping and sprinkle with chopped parsley. For safer serving, provide small plates and napkins—the center will be very hot.
