    Pat shrimp dry with paper towels. Place in a medium bowl.

    Add kosher salt, black pepper, minced garlic, lemon juice and soy sauce to the shrimp. Toss gently to combine and let rest 8–10 minutes while you prepare the coating. Do not marinate longer than 15 minutes or acid will begin cooking the shrimp and make them tough.

Batter & Coating

    Make dry mix

    In a shallow bowl or wide plate, whisk together all-purpose flour, cornstarch, baking powder, optional cayenne and paprika. If using panko, place it in a separate shallow bowl.

    Make wet batter

    In a second bowl, lightly beat the egg, then whisk in the cold sparkling water until combined. The batter should be thin but slightly viscous — adjust with an extra tablespoon of sparkling water or a teaspoon more flour if necessary.

    Coat the shrimp

    Working one at a time, dredge each marinated shrimp in the dry flour/cornstarch mixture, shaking off excess. Dip the shrimp into the batter, allowing excess to drip back into the bowl. If using panko for added crispiness, press the battered shrimp into the panko to coat evenly.

Frying & Finish

    Heat oil

    Pour oil into a large heavy skillet or a deep pot so it reaches about 1 to 1.5 inches deep, or prepare a deep fryer. Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter — it should sizzle and float immediately.

    Fry shrimp

    Carefully add coated shrimp to the hot oil in a single layer without crowding (work in batches). Fry 1.5–2.5 minutes per side, or until golden brown and crisp. Turn shrimp once with tongs or a spider to ensure even browning. Smaller shrimp will cook faster; avoid overcooking — shrimp should be opaque and slightly springy.

    Drain and season

    Using a slotted spoon or spider, transfer fried shrimp to a wire rack set over a baking sheet or to paper towels to drain. While still hot, lightly sprinkle with salt to taste.

    Arrange shrimp on a platter, garnish with chopped parsley or cilantro if using, and serve immediately with lemon wedges and spicy mayo or your chosen dipping sauce.
