Warm milk and cream
In a medium saucepan, combine 1 cup whole milk and 2 cups heavy cream. Add 3 tablespoons granulated sugar and a pinch of fine sea salt. Warm over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling (steam rising, small bubbles at edge) — about 5–7 minutes.

Temper egg yolks
In a separate bowl, whisk 4 large egg yolks until smooth. Slowly pour about 1/3 cup of the hot milk-cream mixture into the yolks while whisking constantly to temper them. Continue adding hot liquid a little at a time until about half the hot mixture has been incorporated and the yolks are warmed.

Cook custard
Pour the tempered yolk mixture back into the saucepan with the remaining milk-cream and return to medium-low heat. Cook, stirring constantly with a wooden spoon or heatproof spatula, until the custard thickens enough to coat the back of the spoon and registers 170–175°F (77–80°C) if using a thermometer — about 3–6 minutes. Do not boil.

Finish and chill
Remove the pan from heat and stir in 2 teaspoons pure vanilla extract. Strain the custard through a fine-mesh sieve into a clean bowl to remove any coagulated bits. Place the bowl in an ice bath to cool quickly, stirring occasionally, until the custard is room temperature (about 15 minutes), then cover and chill in the refrigerator at least 3 hours or overnight.

Churn and freeze
Once the custard is thoroughly chilled, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency (typically 20–30 minutes). Transfer the ice cream to a freezer-safe container, press a piece of parchment against the surface to prevent ice crystals, seal, and freeze at least 3–4 hours to firm up before serving.

Place 1 cup mixed berries, 2 teaspoons granulated sugar, 1 teaspoon lemon juice, and 1 teaspoon water into a small saucepan over medium heat. Cook, stirring occasionally, until the berries release juices and soften and sauce slightly thickens — about 5–7 minutes. Taste and adjust sweetness. Keep warm until ready to serve.

Warm your chosen base: heat a slice of apple pie, brownie, or warm cookie until hot (oven at 350°F/175°C for 8–10 minutes or microwave 20–30 seconds depending on density).

Place one warm piece of pie/brownie or warm cookie on each dessert plate. Immediately top with 2 scoops of the chilled vanilla ice cream.

Spoon 1–2 tablespoons warm fruit compote over the ice cream (if using). Drizzle about 1 tablespoon of caramel or chocolate sauce around or over the ice cream. Sprinkle 1 tablespoon chopped toasted nuts per serving if desired.
