Method

Prepare the cactus

    Clean and slice

    Using a sharp knife and kitchen gloves, remove all spines and visible nodules from the nopales. Rinse under cold water and pat dry. Trim edges and cut pads into 1/2-inch wide strips about 3–4 inches long (stix). Aim for uniform thickness so they cook evenly.

    Blanch to reduce slime: Bring a medium pot of salted water to a boil. Add cactus strips and blanch 2 minutes. Immediately transfer to an ice bath to stop cooking. Drain well and pat dry with paper towels. Blanching removes excess mucilage and improves texture.

Batter & dredge

    Make dry dredge

    Combine 1/2 cup flour, 1/2 cup cornmeal (or panko), 1/2 tsp salt and 1/4 tsp chili powder in a shallow bowl. This will give a light crunchy exterior when used after batter.

    Make the batter

    In a medium bowl whisk together 1 cup flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp smoked paprika and 1/2 tsp garlic powder. If using egg, beat it lightly and whisk into the dry mix. Gradually pour in 1 cup cold sparkling water while whisking until just combined — a slightly lumpy, moderately thick batter is ideal. Keep batter cold (set bowl over ice if kitchen is warm).

    Dredge the cactus: Lightly toss each dried cactus strip in the dry dredge (flour/cornmeal) to coat. Shake off excess. This helps the batter cling and yields extra crispness.

Fry the cactus stix

    Heat oil

    Pour oil into a deep skillet or pot to a depth of about 1.5–2 inches (or use a fryer). Heat to 350°F (175°C). Use a thermometer for accuracy. If you do not have a thermometer, test with a small drop of batter — it should sizzle and rise immediately.

    Coat and fry

    Working in batches (do not overcrowd), dip dredged cactus strips into the cold batter to coat completely, letting excess drip off. Carefully lower into hot oil with tongs or a slotted spoon. Fry 2.5–4 minutes per batch, turning once, until golden brown and crisp. Smaller strips will be done closer to 2.5 minutes; thicker pieces may take a bit longer.

    Drain and season: Remove stix with a slotted spoon to a wire rack set over a baking sheet or paper towels. Immediately sprinkle a pinch of salt over hot stix. Repeat with remaining strips. Keep finished batches warm in a 200°F (95°C) oven if needed.

Make dipping sauce & finish

    Chipotle-lime sauce

    Whisk together 1/2 cup mayonnaise, 1/4 cup crema or sour cream, 1 tsp chopped chipotle in adobo, 1 tbsp lime juice, 1/2 tsp honey and 1/4 tsp salt until smooth. Taste and adjust chipotle for heat or lime for brightness.

    Serve: Arrange cactus stix on a platter, garnish with chopped cilantro and lime wedges. Serve immediately with the chipotle-lime dipping sauce on the side so the stix remain crisp.
