Prepare the bitters and piloncillo
In a mixing glass, combine piloncillo syrup with Angostura bitters and orange bitters. Stir briefly to ensure the syrup is well distributed and the bitters are incorporated.

Add mezcal and chill
Pour the mezcal into the mixing glass with the bitters mixture. Add 4 ice cubes and stir vigorously for about 15-20 seconds to chill the drink and begin dilution.

Strain into a serving glass
Fill a rocks glass with fresh ice and strain the mezcal mixture over the ice to keep the drink well-chilled.
