Chickpea fritters

Yogurt-lime sauce

Method

Make chickpea fritter mixture

    Rinse and drain the chickpeas and pat dry. Mash in a large bowl with a fork or pulse briefly in a processor leaving some texture.

    Stir in cilantro and red onion. Add garlic, cumin, paprika, and chili powder.

    Mix in breadcrumbs, flour, salt, pepper, and lemon juice. If the mixture is too dry, whisk in 1-2 teaspoons water or a splash of olive oil to help bind.

Form and fry fritters

    Form the mixture into 8-10 small patties about 1/2 inch thick.

    Heat olive oil in a nonstick skillet over medium heat. Fry patties in batches 3-4 minutes per side until golden and crisp. Add more oil as needed.

    Transfer fritters to a plate lined with paper towels to drain excess oil.

Make yogurt-lime sauce

    Whisk yogurt with lime juice, cilantro, and salt in a small bowl. Taste and adjust seasonings.

To serve

    Serve warm fritters with the yogurt-lime sauce on the side. Garnish with extra cilantro and lime wedges if desired.
