Method

Marinating the seafood

  1. 1

Cut the firm white fish into uniform 1/2-inch (about 1.25 cm) cubes and place in a large non-reactive glass or ceramic bowl.

  2. 2

Pour the lime juice and lemon juice over the fish until completely submerged; sprinkle salt and pepper.

  3. 3

Gently stir to ensure all pieces are coated; cover and refrigerate for 15-20 minutes, or longer if you prefer a firmer ceviche.

Aromatics and vegetables

  1. 4

While fish marinates, thinly slice red onion and chop cilantro.

  2. 5

Mince jalapeño and garlic; set aside.

Combine and flavor

  1. 6

Remove fish from the marinade and drain briefly, reserving a little of the juice.

  2. 7

Add red onion, jalapeño, garlic, and cilantro to the marinated fish; toss to combine.

  3. 8

If desired, stir in extra lime/lemon juice to taste and adjust salt.

Texture and garnish

  1. 9

Fold in avocado cubes and cooked corn kernels; gently mix.

  2. 10

Add cooked sweet potato cubes; mix lightly to keep their shape.

  3. 11

If using optional tomato or cucumber, fold in now for extra color and freshness.

Serve

  1. 12

Chill the ceviche for 5-10 minutes before serving to let flavors meld.

  2. 13

Serve cold with tortilla chips, plantain chips, or sliced cucumbers.
