Method

ALMOST DAILY CHANGING MENU

  1. 1

    Marinade preparation

In a small bowl, whisk lime juice, minced garlic, rehydrated chilaca, olive oil, salt, and black pepper to create a bright, spicy marinade.

  2. 2

    Marinate the carne asada

Pat the steak dry and place it in a shallow dish. Pour the marinade over the steak, turning to coat. Let sit 20-30 minutes at room temperature.

  3. 3

    Cook the carne asada

Heat a heavy skillet or grill pan over high heat. Sear the steak about 3-4 minutes per side for medium-rare to medium, depending on thickness. Remove and rest 5 minutes, then slice thinly against the grain.

  4. 4

    Warm tortillas and beans

Warm flour tortillas on a dry skillet until pliable. In a small pot, heat refried beans until steaming and smooth, seasoning with a pinch of salt if needed.

  5. 5

    Prep cilantro and salsa

Chop cilantro and set aside. Stir salsa roja in a small bowl to loosen if thick.

  6. 6

    Assemble burritos

Lay each tortilla flat. On the center, spread a thin layer of beans, add slices of carne asada, spoon salsa roja, scatter cilantro, and sprinkle minced chilaca. Fold in the sides and roll tightly.

  7. 7

    Finish and serve

Optional: grill seam-side down for 1-2 minutes to seal. Slice burritos in half and serve with extra salsa and lime wedges.
