Preparation of Vegetable Stew
1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.
2. Add Root Vegetables
Stir in the diced carrots and cubed potatoes, cooking for about 5 minutes until they begin to soften.
3. Add Remaining Vegetables
Add the bell peppers, zucchini, and crushed tomatoes to the pot, mixing well.
4. Season and Simmer
Pour in the vegetable broth, then add the salt, black pepper, cumin, coriander, and bay leaf. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, or until all vegetables are tender.
5. Finish and Serve
Remove the bay leaf, stir in fresh parsley, and adjust seasoning to taste. Serve hot with housemade clay-oven tanoor bread.
