Chill and prepare tools
If serving chilled, place the melon in the refrigerator for 30–60 minutes beforehand. Gather a sharp chef's knife, spoon, melon baller (optional), cutting board and a small bowl for dressing.

Cut and deseed melon
Place melon on cutting board. Cut off both ends to create stable flat surfaces. Stand melon on one flat end and slice down the middle to halve it. Use a spoon to scoop out and discard seeds from each half.

Portion melon
Option A — Cubes: Lay each half cut-side down and slice into 1-inch thick wedges, then cut crosswise into 1-inch cubes. Option B — Balls: Use a melon baller to scoop out uniform melon balls. Option C — Wedges/slices: Cut each half into 6–8 wedges for serving. Transfer prepared melon to a serving bowl or platter.

In a small bowl, combine juice of the lime (about 1 tbs), honey (2 tbs) and sea salt (a pinch up to 1/4 tsp). Whisk until honey dissolves. Taste and adjust: add more lime for acidity, more honey for sweetness, or a pinch more salt to enhance flavor.

Pour the dressing evenly over the prepared melon and gently toss (if cubed/ball) or brush lightly over wedges/slices so the fruit is coated but not saturated. Allow to sit 5 minutes so flavors marry.
Assembly & finishing

Tear mint leaves and scatter over the melon. If using, sprinkle cracked black pepper (a light pinch) for a subtle contrast and crumble feta or place torn pieces of burrata on top for creaminess.

For a salty-sweet hors d'oeuvre, wrap melon wedges or balls with prosciutto slices and arrange on a platter. Lightly finish with a final tiny pinch of sea salt and a few extra mint leaves for garnish.

Serve immediately at room temperature or chilled. Leftovers: store in an airtight container in the refrigerator for up to 24 hours; the texture will soften with time.
