Mix base
Pour 1 liter of your chosen wine (red for Vinho Tinto or white for Vinho Branco) into a large pitcher. Add 60 ml orange liqueur and 60 ml simple syrup. Stir gently to combine.

Taste the wine mixture and adjust sweetness: add up to another 15–30 ml simple syrup if you prefer it sweeter, or a splash more liqueur for orange flavor.

Prepare fruit
Wash the fruit. Thinly slice the orange and half lemon. Core and dice the apple into 1/2-inch cubes. If using strawberries or peaches, slice into bite-sized pieces.

Add all prepared fruit to the wine mixture. Tuck in 1 cinnamon stick for red sangria (omit for white) or add 6 sprigs of fresh mint for white sangria. Stir to submerge the fruit.

Cover the pitcher and refrigerate for at least 2 hours, preferably 4–12 hours, to allow the fruit to macerate and flavors to meld. For best results refrigerate overnight.

About 10 minutes before serving, remove the pitcher from the fridge. Add 500 ml chilled club soda or sparkling water and stir gently to combine. This preserves some fizz.
