Cocktail

Method

Cocktail

  1. 1

    Measure and combine

Add 2 oz cachaça, 0.75 oz fresh lime juice, 0.5 oz cane syrup, 0.25 oz aged añejo rum, 0.25 oz amaro, and 2 dashes of orange bitters into a cocktail shaker.

  2. 2

    Add ice and shake

Fill the shaker with about 6 ice cubes. Secure the lid and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted. This dilutes and chills the drink to proper balance.

  3. 3

    Prepare glass

Fill a double old‑fashioned or rocks glass with about 1 cup of finely crushed ice. If you prefer a taller presentation, use a Collins glass and more crushed ice.

  4. 4

    Strain and layer

Double-strain the shaken cocktail over the crushed ice to remove small ice chips and pulp. The mix of cachaça and aged rum will rest over the crushed ice, and the amaro will lend a faint amber hue.

  5. 5

    Garnish and finish

Thread or float a lime wheel on top of the crushed ice and optionally tuck a mint sprig against the glass rim. Give the mint a gentle clap between your hands before tucking it in to release aroma. Serve with a short stirring straw so the drinker can incorporate crushed ice as it melts.
