Syrup Base

Method

Syrup Base

  1. 1

    Make simple syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add 2 tablespoons light corn syrup if using. Heat over medium, stirring until sugar fully dissolves. Bring just to a simmer, then remove from heat. Let cool for 10–15 minutes.

Orange Flavoring

  1. 2

    Prepare citrus

While the syrup is warming/cooling, zest one orange finely to measure 1 teaspoon zest. Juice oranges and lemons and strain to remove pulp and seeds; you should have about 3 tablespoons orange juice and 1 tablespoon lemon juice.

  2. 3

    Infuse and combine

Once the syrup is warm (not boiling) and sugar dissolved, stir in the strained orange juice, lemon juice, orange zest, 1 teaspoon natural orange extract, and 1 teaspoon citric acid. Taste carefully: the mixture should be bright and tangy. If you want a deeper orange aroma, add up to 1/4 teaspoon more extract or a drop more orange oil (use sparingly). If desired, add 1–2 drops orange food coloring and stir to incorporate. Allow the syrup to cool to room temperature; you may chill in the refrigerator until cold (30–60 minutes) for best carbonation retention when mixing.

Carbonation & Finishing

  1. 4

    Mix the soda

In a pitcher or individual glasses, add cold carbonated water. For a typical dilution aiming for Fanta-like sweetness, use approximately 1 part syrup to 4 parts carbonated water. For the recipe quantities above: for every 1/2 cup (120 ml) of syrup use 2 cups (480 ml) chilled carbonated water. If you made the full syrup (about 1 1/4 cups after combining), use 4 cups sparkling water. Add ice to glasses if desired. Pour the chilled syrup into the carbonated water gently to preserve bubbles and stir very lightly once to combine.

  2. 5

    Adjust and serve

Taste and adjust: add a bit more syrup if you want it sweeter or more orange flavor, or a squeeze of lemon if it needs brightness. Serve immediately over ice, garnished with an orange wheel or twist if desired.
