Coffee Base

Milk & Foam

Method

Coffee Base

  1. 1

    Brew

Brew 1 cup of strong coffee using your preferred method (drip, French press or pour-over). If you want a bolder cup, dissolve 1 tsp instant espresso powder into 1/4 cup boiling water and add to the brewed coffee.

  2. 2

Pour the hot brewed coffee into a large mug (caneca) leaving room for milk and foam (~1/3 of the mug).

Milk & Foam

  1. 3

    Heat and Sweeten

Combine 1/2 cup whole milk, 2 tbsp heavy cream and 1 tsp sugar in a small saucepan over medium heat. Warm gently until steaming but not boiling, about 2–3 minutes.

  2. 4

    Froth

Froth the warmed milk mixture until foamy. Use a handheld frother for 20–30 seconds, whisk vigorously for 30–45 seconds, or shake vigorously in a sealed jar for 45–60 seconds. You want a creamy microfoam with some volume.

  3. 5

Hold back the foam with a spoon and pour the warm milk into the mug with the coffee, then spoon the foam on top to fill the caneca.

Flavor & Garnish

  1. 6

    Sweeten & Finish

Stir 1 tbsp sweetened condensed milk into the coffee before adding milk for a creamy, sweet base. Alternatively, drizzle it on top of the foam for extra sweetness. Sprinkle 1/4 tsp cinnamon over the foam, dust with 1/4 tsp cocoa powder and add grated chocolate or shavings if using.

  2. 7

Serve immediately while hot in a large mug (caneca).
