Method

Prepare pineapple

    Wash and trim

    Rinse the whole pineapple under cool running water to remove surface dirt. Pat dry with a towel.

    Remove top and base

    Place the pineapple upright on a cutting board. With a sharp chef's knife, slice off the crown (top) about 1 inch (2–3 cm) below the leaves. Slice off the base so the pineapple sits flat, about 1/2–1 inch (1–2 cm).

    Remove the skin

    Stand the pineapple on its flat base. Working top to bottom, cut downward to remove the skin in vertical strips, following the curve of the fruit. Remove any remaining 'eyes' (brown spots) by carving shallow V-shaped grooves with the tip of the knife or a paring knife.

    Core and cut

    There are three common options depending on how you want to serve: - Rings: Slice the pineapple crosswise into 1/2-inch (1–1.5 cm) thick rounds. Use a small round cutter or a paring knife to remove the tough core from each ring. - Spears/ wedges: Cut the whole peeled pineapple lengthwise into quarters, then slice out the triangular core from each quarter and cut each quarter into 3–4 spears. - Cubes: Halve the pineapple lengthwise, quarter each half, remove the core from each quarter, then slice flesh off and dice into cubes. Choose one method and proceed accordingly.

    Optional seasoning

    Place your cut pineapple in a bowl or on a platter. Squeeze the lime over the pineapple pieces to brighten flavor. Drizzle the honey or maple syrup evenly (use less or omit for very sweet pineapple). Sprinkle a light pinch of sea salt to enhance sweetness. If desired, scatter mint leaves and lightly dust with cinnamon or a small pinch of chili flakes for contrast.

    Grilling option (optional)

    For warm, caramelized pineapple: preheat a grill or grill pan to medium-high. Lightly brush pineapple rings or spears with a little honey and place directly on the grill. Cook 2–3 minutes per side until grill marks form and sugars caramelize. Remove and finish with lime and mint as above.

    Serve

    Arrange pineapple on a platter or thread onto skewers. Serve immediately at room temperature or chilled. Leftover cut pineapple will keep well in an airtight container in the refrigerator for up to 3–4 days.

Cleanup and storage

    Wrap or store unused pineapple scraps in a sealed bag or container and refrigerate for up to 2 days for use in smoothies or cooking. Wash knives and cutting board with hot soapy water to remove sticky residue.
