Homemade Estracetti noodles with diced salmon, shrimp, mushrooms, and diced zuccini tossed in a vodka tomato cream sauce.

Noodle Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Using a fork, whisk the eggs and gradually incorporate the flour until a dough forms.

Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin to your desired thickness, then cut into strips to form the estracetti shape.
Sauce Preparation

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add sliced mushrooms and diced zucchini, cooking for about 5-7 minutes until softened.

Add Seafood
Stir in the diced salmon and shrimp, cooking for another 3-4 minutes until the seafood is cooked through.

Deglaze with Vodka
Carefully pour in the vodka and let it simmer for about 2 minutes, allowing the alcohol to evaporate.

Add Tomatoes and Cream
Stir in the crushed tomatoes, heavy cream, red pepper flakes, salt, and black pepper. Let the sauce simmer for about 10 minutes until it thickens slightly.

Finish with Basil
Remove the skillet from heat and stir in the chopped fresh basil.
Combining & Serving

Cook the Noodles
In a large pot of salted boiling water, cook the estracetti noodles for 2-3 minutes until al dente. Drain and reserve a little pasta water.

Combine and Serve
Add the cooked noodles to the sauce, tossing gently to coat. If needed, add reserved pasta water to reach desired consistency. Serve immediately, garnished with additional basil if desired.
