    In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually mix the flour into the eggs until a dough begins to form.

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    In a mixing bowl, combine the ricotta cheese, cooked spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Ravioli Assembly

    After resting, divide the dough into quarters. Roll out one quarter at a time on a floured surface until it’s about 1/16 inch thick.
