To Make the Ravioli Dough

    Mix the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix until a rough dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

To Prepare the Short Rib Filling

    Sear the Short Ribs

    In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper. Sear on all sides until browned, about 5-7 minutes.

    Cook the Filling

    Remove the ribs and add chopped onion and garlic to the pot. Sauté until softened. Place the short ribs back in the pot, add beef broth and thyme, cover, and simmer for 2-3 hours until tender. Shred the meat and set aside.

To Make the Mushroom Marsala Sauce

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat. Add sliced mushrooms and cook until browned, about 5-6 minutes.

    Add Marsala and Cream

    Pour in the Marsala wine and let it reduce for 3-4 minutes. Stir in the heavy cream and simmer for another 5 minutes. Season with salt and pepper to taste.

To Assemble and Cook the Ravioli

    Roll Out the Dough

    On a floured surface, roll out the ravioli dough into thin sheets. Cut them into squares.

    Fill and Seal the Ravioli

    Place a small spoonful of the short rib filling in the center of each dough square. Wet the edges with water, fold over, and seal tightly.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes until they float. Remove with a slotted spoon.

To Serve

    Combine and Plate

    Toss the cooked ravioli in the mushroom Marsala sauce, add the spring vegetables, and serve with grated Parmesan cheese on top.
