Salmon Preparation
- 1
Prepare the Salmon
Season the salmon fillets with salt and black pepper on both sides.
- 2
Sauté the Salmon
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned salmon fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
- 3
Make the Sauce
In the same skillet, add the diced tomatoes, Kalamata olives, capers, and white wine. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
- 4
Add Marinara
Stir in the marinara sauce and fresh basil. Return the salmon to the skillet, spooning the sauce over the top. Let it simmer for an additional 3-4 minutes until heated through.
Sauteed Spinach

Sauté the Garlic
In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
