Method
Chicken Marinade
- 1
Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, salt, black pepper, dried oregano, and lemon juice. Mix well.
- 2
Marinate the Chicken
Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours.
Marsala Sauce
- 3
Sauté Mushrooms
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.
- 4
Cook the Chicken
Remove the chicken from the marinade and discard the marinade. In the same skillet, add the marinated chicken breasts and cook for about 4-5 minutes on each side, until cooked through and golden brown.
- 5
Add Marsala Wine
Pour in the Marsala wine and chicken broth. Bring to a simmer, scraping any browned bits from the bottom of the skillet. Let it cook for about 5 minutes until the sauce reduces slightly.
