Method

Marinating the Chicken

    Prepare Marinade

    In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper.

    Marinate Chicken

    Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight.

Cooking the Chicken

    Cook Chicken

    In a large skillet over medium heat, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until fully cooked and golden brown.

    Prepare Balsamic Reduction

    In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and reduce until thickened, about 10-15 minutes.

    Melt Cheese

    Once the chicken is cooked, top each piece with shredded Fontina cheese, cover the skillet, and let it melt for about 2-3 minutes.

    Finish with Reduction

    Drizzle the balsamic reduction over the chicken before serving.

Making Mashed Potatoes

    Boil Potatoes

    In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter and milk, mashing until smooth. Season with salt to taste.

Sauteing Spinach

    Sauté Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt to taste.
