Prepare the Filets
Season the center cut filet mignon with salt and black pepper on both sides.

Sear the Filets
In a large skillet, heat olive oil over medium-high heat. Add the filets to the skillet and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the filets and let them rest.

Sauté the Spinach
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add the Spinach
Add fresh spinach to the skillet. Cook until wilted, about 2-3 minutes. Season with salt and black pepper.
