Prepare Coating & Chill

Cut and arrange cheese
If not already individual sticks, cut a block of mozzarella into 7 equal 1/2-3/4" thick sticks. Pat each stick dry with paper towels to remove excess moisture; this helps coating adhere and prevents excessive oil splatter.

Set up dredging station
Place the flour in a shallow bowl. In a second bowl, whisk together the 2 eggs and 2 tablespoons of milk until homogeneous. In a third shallow bowl, combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, salt, and black pepper; mix thoroughly.

First coating
Working one at a time, roll each cheese stick in the flour, tapping off excess. Dip into the egg mixture, letting excess drip back into the bowl. Press into the breadcrumb mixture, coating all sides firmly so breadcrumbs adhere. For best results, repeat the egg dip and breadcrumb press a second time to create a double coating (this helps prevent cheese leakage when frying).

Freeze to set
Place the coated sticks on a parchment-lined tray or plate, ensuring they are not touching. Freeze for at least 30 minutes (or up to 2 hours) to firm the cheese and set the coating. This step reduces melting and leakage during frying.
Frying & Serving

Heat oil
Pour about 3 cups of neutral oil into a heavy-bottomed pot or deep skillet, filling to a depth of approximately 2-3 inches. Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and brown in about 30–45 seconds.

Fry sticks
Working in small batches (2–3 sticks at a time to avoid temperature drop), carefully lower frozen coated mozzarella sticks into the hot oil using a slotted spoon or spider. Fry for 1 to 1.5 minutes total, turning as needed, until the coating is golden brown. Do not over-fry; extended time will cause cheese to burst out.

Drain
Remove sticks with a slotted spoon and transfer to a wire rack set over a baking sheet or a plate lined with paper towels to drain excess oil. Let rest 1–2 minutes — the cheese will be hot inside.

Finish & serve
Warm the pizza sauce if desired. Arrange the mozzarella sticks on a serving plate, sprinkle with chopped parsley if using, and serve immediately with pizza sauce on the side for dipping.

Safety note
Handle hot oil cautiously. Keep a close eye on the fryer temperature and do not overcrowd the pan. If cheese begins to burst from sticks while frying, reduce oil temperature by 10–15°F and shorten fry time.
