Method

Prep & Assembly

  1. 1

    Preheat oven

Preheat the oven to 400°F (200°C). If using a broiler for finishing, position the rack about 6 inches from the broiler element and preheat broiler to high.

  2. 2

Slice the loaf in half lengthwise to create two even bread 'boats'. If you prefer smaller servings, slice the loaf into 1-inch thick diagonal pieces but keep them attached at the bottom so you can spread butter on each slice.

  3. 3

Drain the mozzarella and pat dry with paper towels. If using a whole mozzarella log, slice or tear into 1/4-inch strips so it melts evenly.

  4. 4

In a small bowl combine the softened butter, olive oil, minced garlic, chopped parsley, grated Parmesan, salt, black pepper, and red pepper flakes. Mix thoroughly until smooth and uniform.

  5. 5

Using a spatula or butter knife, spread the garlic butter evenly over the cut surfaces of both bread halves, covering all edges and corners.

  6. 6

Arrange the slices/strips of mozzarella in a single layer over the buttered bread, allowing a little overlap so the cheese melts into a gooey layer. Brush a light coating of olive oil around the exposed crust for extra browning.

Baking & Finishing

  1. 7

Place the assembled bread on a baking sheet lined with parchment or foil (for easier cleanup). Bake in the preheated 400°F oven for 10–12 minutes, until the butter is melted and the cheese is fully melted and beginning to bubble.

  2. 8

For a golden-brown, slightly charred top, switch the oven to broil and broil for 1–2 minutes, watching very closely to prevent burning. Remove when the cheese is bubbly and has light golden spots.

  3. 9

Remove the garlic bread from the oven and let rest for 1–2 minutes. If you baked a whole loaf, use a serrated knife to cut into 1- to 1.5-inch slices now. If you prepared individual slices earlier, separate them carefully.

  4. 10

Sprinkle the chopped fresh basil (if using) over the hot cheese and serve immediately while piping hot.
