Chill glass

If possible, chill a large wine glass in the freezer for 5–10 minutes before assembling to keep the drink colder longer.

Add ice

Fill the chilled large wine glass about three-quarters full with ice cubes (approximately 1 cup).

Pour Aperol

Measure and pour 3 tablespoons Aperol over the ice.

Add Prosecco

Slowly pour 4 oz chilled prosecco into the glass. Pour gently to preserve bubbles; aim for a 3:2 ratio of prosecco to Aperol (here roughly 4 oz to 3 tbsp).

Top with soda

Add 1 oz chilled soda water to top the drink and give it a light effervescence. Stir gently once with a bar spoon to combine without losing carbonation.

Garnish and serve

Garnish with one fresh orange slice on the rim or dropped into the glass. Serve immediately with a short straw or stirrer.

Chill ingredients and equipment

Chill prosecco and soda in the fridge until cold. Place 12 large wine glasses in the freezer for 10 minutes or prepare a large serving pitcher with ice.

Prepare glasses

Fill each of the 12 wine glasses about three-quarters full with ice (about 1 cup per glass).

Measure Aperol

Divide or pour 36 tablespoons (equivalent to 1 cup + 4 tablespoons) Aperol evenly among the 12 glasses, about 3 tbsp per glass.

Add prosecco

Slowly pour a total of 48 oz chilled prosecco across the 12 glasses (about 4 oz per glass), pouring gently to keep carbonation.

Top with soda

Divide 12 oz soda water among the glasses (about 1 oz per glass) and stir each drink gently once to combine.

Garnish and serve

Place one orange slice on the rim of each glass or drop into the drink. Serve immediately.
